Granola Recipe

Here’s the recipe for the granola I’ve found to be such a good start to my day. (It’s adapted from Prevention magazine’s Flat Belly Diet book.)

2 cups of oatmeal
1 and 1/4 cups of walnuts, chopped
1/2 cup of unprocessed bran
1/3 cup of ground flaxseed
1/2 cup maple syrup
1 tsp of grated fresh ginger
1 cup of dried apples, chopped
1/3 cup of dried cranberries

1. Preheat the oven to 300°F. Coat a baking sheet with cooking spray. Combine the oats, walnuts, bran, and flaxseed in a large bowl.

2. Combine the syrup and ginger in a small saucepan. Cook over medium heat until the mixture simmers. Pour over the oats, stirring to coat.

3. Spread onto the baking sheet. Bake for 25 to 35 minutes or until lightly browned, stirring twice. Place in a bowl and stir in the apples and cranberries.

Nutrition per serving (1/10 of the above recipe): 294 cal, 7 g pro, 43 g carbs, 12 g fat, 1 g sat fat, 0 mg cholesterol, 112 mg sodium, 8 g fiber

This is a probably the best granola recipe I’ve ever used. (And I made my first granola almost 40 years ago!)
